Abstract

In this study, we presented the methods for polysaccharide and protein extraction from Cordyceps militaris fruit bodies. Anti-bacterial properties of protein and antioxidant activity of polysaccharides were also evaluated. The results showed that the two positive gram bacteria strains, Bacillus subtilis, Salmonella aureus, and one negative gram strain, Escherichia coli, were inhibited after being treated by extracted protein. Besides, the IC50 value of the polysaccharide was found to be 97.72 ppm.
